Wine and Olive Oil Tasting and Vineyard Tour

We would like to welcome you for an exclusive tour of the Carmine Estate. Your tour will begin at the recently restored, 16th century Vineria del Carmine and a tasting of our wines and farm products with our sommelier. Visitors will learn about our wine making processes and  how the seasons have influenced our wines.

We want visitors to understand how an abandoned valley in central Italy has been transformed with the help of organic agriculture and hard work into one of Italy’s most beautiful valleys. Visitors can then enjoy a walk through our vineyards and learn about the history and wildlife of the Estate. This will help them to fully appreciate the position of the Carmine Estate in this beautiful Umbrian landscape.

Each tasting lasts approximately 1.5 hours and we welcome your questions. If the 12th century Chiesa del Carmine church is not being rented at the time of the tasting, we will gladly include this property in the tour. We welcome visitors to come early and stay on after your tasting to soak up the beautiful views and unique environment. Well-behaved dogs are welcome. Tours are in Italian, English or French.

FIRST COURSE (Choice of)
  • Cappello dell’alpino (homemade fresh spinach pasta in the shape of a mountaineer’s hat filled with fresh ricotta and black truffle)
  • Spaghettini pasta made with two types of Etruscan grain (Verna Grano Rosso and Frassineto) served with a norcina sauce (Umbrian sausage and porcini mushrooms)
MAIN COURSE (Choice of)
  • Tartare of Chianina with black truffle
  • Pollo in salmì, slow-cooked marinated Umbrian style boneless chicken
  • Braised wild boar in Carmine Estate Il Campanile 2016 red wine
  • Aubergine balls, slow-cooked in tomato and basil sauce
  • Each dish is served with seasonal side dishes sourced from our organic vegetable garden
DESSERT (Choice of)
  • Lemon tiramisù with lemon chocolate
  • Panna cotta with Vinsanto and bay leaves with a peach compote
