Carmine Estate has a number of beautiful olive groves with many of the trees well over a hundred years old. The total number of trees is in the vicinity of 1100 and from these we produce the most delicious Extra-Virgin Olive Oil. In 2009 we started the work of bringing the trees back to full production after years of neglect. New trees were planted to fill in gaps where trees had died or had to be removed as they were no longer producing. More pollinators were added to help with the flowering in the spring, and the grove has been pruned back to remove dead wood and fertilized according to organic guidelines.
Chiesa del Carmine Extra Virgin Organic Olive Oil is a blend of our Frantoio, Leccino, Moraiolo, Dolce Agogia and Pendolino olives. The colour is a beautiful fresh green, the aroma is rich and fruity and the taste is spicy and peppery, with just a hint of walnut. The olives were picked in the middle weeks of November in 2018 and pressed within 24 hours to avoid any fermentation or oxidation. The result is a clean oil with very low acidity, ideal for fresh bread, salad or warm bruschetta with tomato and basil. It is far too good to cook with.
